Ingredients:
- 1 1/2 cups all purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup sugar
- 1 egg
- 1/4 cup vegetable oil
- 3/4 cup milk
Method:
Firstly beat the egg, milk and the oil together. Then separately mix the dry ingredients together in a different bowl and add the dry mix to the egg mix.
Then lightly dust out a buttered baking dish with flour and tap away any excess flour when the bowl is completely covered with flour.
Add this cake mixture to a baking tray or pan and level off with a baking knife.
Bake in a pre-heated oven at 370 degrees (F) for 25 minutes.
Voila and Congratulations – you now have a stunning cinnamon coffee cake!
How easy was this to make? And it took you just over 45 minutes from start to finish.

A Stunning Topping for Your Cinnamon Coffee Cake
NB: You have to add the topping while your cake is still hot or it will not work! So you should reduce the cooking time down by 5 minutes if you want to add a topping and then follow the rest of the recipe.
There are several variations for a suitable topping, but as I like coconut and nuts, so here goes…
Ingredients:
- 1 cup of coconut
- Half to 2/3 of a cup of brown sugar
- 1/3 cup of butter
- Half cup of double cream
Method:
Mix the ingredients together and spread over the cake while it is still hot. Put the cake into the top of the oven until the coconut topping has turned a light golden color (anything up to 5 minutes is usually enough.
